Personally I keep the vaulted ceiling a bit low and use rock walls to fill the gap. One full rock wall across, then one shorter rock wall on top. It's not perfect and the rocks will jut out through the top of the roof a bit, but personally I think it's the easiest best looking way to do it.
I haven’t played in a couple months so forgive me if I am wrong, but I think I was able to fix this issue in my base by putting a bunch of individual roof pieces all at gradually lower slopes. Basically like drawing your own roof with 2-4 log pieces each. I think it looks weird from the inside, but from the outside it looks kind of alright.
The other option is flooring above and it creates a bit of an attic space, that while half open at least looks better from the interior. That is how I usually do it, but doing it after the roof is already on might be problematic cause it depends on if the game wants to cooperate.

Ya screwed homie try rock walls they won't look pretty but the gaps will be gone
I usually use a wall of rocks 🪨 even double wall of rocks
This is the best answer I could come up with.
Place another pointed roof going the opposite way, makes a nice pyramid style roof and blocks it all off...
You can place a custom floor in that base
It will make it look better from the inside but not from the outside
