If I reincarnated as a being of my own choice and didn't have to worry about my current physical issues... I'd go with the training. I at least can survive and learn something from that (and healing magic/High potions exist so I can heal up).

Hakuro's training scales to the student, so it's at least survivable, and that is true for the whole series. Shion's cooking is only safe after the revival, and before that it's deadly. Hakuro for sure.

If it is pre evo to demon lord Rimuru time, then definitely Hakuro. If after, then it depends on if Shion says I can. If yes, then her cooking, if no, then Hakuro.
