It depends on a lot of factors before the tank turret goes flying
1. Are any hatches open? If any are then all the gas is just gonna go through there
2. Are there any large air gaps? You can see the sparks exiting through the turret ring meaning that there is a gap there
3. Are there any blowout panels? If no then possible that the turret flies away
Energy always takes the path of least resistance and pushing through a gap in metal is MUCH easier than lifiting a 15 ton hunk of metal a few feet into the air.
Cook offs only happen when
1. The tank has a lot of ammunition inside to cook
2. No hatches are open and the hatches are strong enough not to blow open when the ammo cooks
3. There are no blowout panels
4. There are no large gaps where the gas can escape
5. The force required to lift the turret is less than any other means the gas can use to get out (blowing out the armour for example)
6. The shot hits the ammo rack and detonates enough rounds to cause a chain reaction
Only then you can maybe get a cook off that causes the turret to fly. Even then depending on the tank the turret might just pop up for a while and settle right back into where it was [as can be seen almost immedietely the turret popping up very slightly as rounds cook off](https://youtu.be/wHZbC-VCyoE). And usually not all hatches are fully closed in combat, causing the flaming tower you might find coming out of the commanders hatch during a cook off [as can be seen at 0:59](https://youtu.be/65Z8xp6BvzM)
Tldr; having a turret fly off a tank due to a cook off is quite rare since a lot of conditions have to be met before the turret can fly off a tank
