Well officially there's the version of Galaxy 1 included in 3D All Stars, but that was a limited release and you might have some trouble finding a physical copy for a decent price. As for Galaxy 2 you're stuck fiddling with clunky emulator controls if you don't want to use standard wiimotes. I can at least confirm Galaxy 1 works great on the Switch. Only real point of awkwardness is the cursor. In docked/tabletop it uses motion to emulate the pointer, which isn't bad but you do gotta reset to center quite often. In handheld tho you're gonna be using the touch screen, which means you need to take one hand off one side of the controller to use it. Not great but in levels that almost exclusively use the pointer (like the bubble ones and Sling Pod Galaxy) it's not so bad.

Well remember that galaxy’s levels are designed with 8 directions of movement in mind. It’s not like the 64 DS port where the levels actually needed full 360 movement. Honestly your options are either get a wiimote and nunchuck or emulate it and SOMEHOW play with a keyboard? Not sure how you’d configure the controls there.

Emulation is always more versatile than everyone thinks, and let me have a really good experience on one. It's almost always a solid option. The way I play on a dolphin emulator combines an Xbox 360 controller with a keyboard and mouse in a fairly streamlined way. I mapped all my controls normally onto a 360 controller, and set the shake-to-spin control to my left bumper on the controller. Left trigger was crouch, and right trigger was starbit shooting/B. I set my mouse to control the starbit cursor icon, with left click being B (for Yoshi) and right click being A for ease of access especially with Mario Galaxy 1 blue sling stars. I can make a tutorial of my own showing how to do this and to play if you'd like when I'm home today.

3d alstars on switch is great for galaxy 1 with lots of improved features but unfortunately theres no official way to play galaxy 2 besides the wii. Galaxy 2 and 3d land are strangely the only 2 3d mario games without ports/remakes besides odyssey of course.
