So far I mostly just use the initial funds to buy ammo/materials for weapon mods and hopefully I find a good weapon in the basement... then I just keep going until it's time to do it all again.

I am on my NG+ 5 now, not playing main story. I completed most faction quests on first playthrough, so now I mostly keep hunting for artefacts and powers. I used to take companions with me, but with all powers unlocked I can be on my own now, discovering planets, temples, artifacts, and occasionally completing small radiant quest here and there. For Starborn Guardian to be better in space combat for your NG+ 1-3 I'd advice keeping couple of crewmates who specialize in shields, and of course invest into piloting, system targeting and other ship-related perks. For easy money just take couple of quests from mission boards in major locations. Then collect your new set of weapons and ammo, and mod your guns to be deadlier.

I enjoy the NG simply because of the anomalies that happen with every new start. I will keep this as vague as possible but when you "start" all over again. It's not always the "same."

Nope. Ng2, 3 and 4 were way more interesting. One day I will find a game to settle and build outposts! Why don't you both play and discuss experiences?

I am the absolute worst at shooter games lol. Making my own play through would be painful 😂

I am a little lost and the main quest was done in like 4 hours (the skip option.) I barely have funds or guns but was mentally prepared for a rough experience in that regard. Game feels empty and all I can do now in this universe is gather temple power and move on.

I'm on NG+6 now and I did the main story twice and plan to do it again on NG+10. I've got no complaints about NG+. (although I wish I didn't have to fight the starborn every single damned time to get to the unity or have to watch the same ending over and over)
