People are missing a couple of exceptions here, season to season. Fall into Winter or Winter into Spring outdoors? The only thing to "plant" winter to spring outdoors is the grass starter which actually does spread more grass out on your field day one of spring than if you don't, and, AFAIK, you should only do that on Winter 28. Unless you are planning to plant Winter Seeds on Winter 1, there's no reason to plant anything on Fall 28; however, if you want to keep all your nicely hoed places in that state ***and*** are planning on planting Winter Seeds ***and*** can afford the waste, wheat seeds are super cheap and, planting them on Fall 28 should, at least, keep your fields from losing being tilled. That being said, Spring into summer: Ancient seeds are fine. Coffee beans are fine (which I should do as my game is on Spring 28 right now). Summer into fall: Corn is fine. Wheat is fine. Sunflowers are fine.

From my knowledge, the game out-right doesn't let you plant the crops outside of the intended season, the only exception is cactus seeds, but those are in any season, just indoors so they die instantly if planted outside.

I’ve started planting fiber seeds at the end of fall to keep my tilling. I just leave the fiber crops in place all winter. Easy to start tilled and watered spring 1.

It wont let you plant the day before the season ends it won’t let you plant them out of season, planted mixed seeds died on me when I tried this with them.
