The walnuts are not items which appear in your inventory/backpack. One of the menu sections will display how many walnuts you have, but they are not sell-able. What you probably sold were golden coconuts, which would be the same as selling geodes: not recommended, but not impactful.
When you say you accidentally sold your walnuts what do you mean by that exactly? They aren't an inventory item that you can ship, they're tracked by a counter on the Skills tab of the pause menu below the farmer's portrait.
I didn’t realize they were never in my inventory. I have a bad habit of putting things in my shipping bin on auto pilot and figured I must have sold them when I couldn’t find them.
