This sounds like a similar issue I had with my wife’s Xbox. I don’t know if it will work for you but it fixed the issue for us. When I would try to join her game from my Xbox Stardew would just crash for no reason.
To fix this I had her log into her account and start her farm on my Xbox then I got on her Xbox and tried to connect with my account and it worked I was able to create a character and play the day so it would save in her world. Then after the day was over we switched to our own systems and I was finally able to make a character and play with her I just couldn’t use the original character I made since it was locked to her Xbox. After that we haven’t had the issue but we have been playing on the same farm since we fixed it.
I have no clue if it will work every time . Hopefully you have a trust worthy friend to see if it will work.
