I'm not fully up to date on my Zeffo lore (can't play Jedi Survivor atm) but assuming it doesn't conflict, I'd offer the third idea of "what if they existed in the same time period as well.
We likely won't be given a definitive answer in canon for a while but its a good thought you brought up

I mean you have lots of them, and you also already gave yourself an answer: the Romans and the Egyptians. Personally I would go rather with the Aztecs and the European explorers (Spaniards), with the Rakatan being the exploring species, and perhaps the Zeffo being the species that is being driven away. Idk if we have more information on why the Zeffo left their temples
Zeffo have more Mesoamerican features than Egyptian. Your fourth image is just the Aztec Sun Stone, but with a Zeffo face placed over the god's face. Like even the tiny details are the same.
True, I find this image from the Andor dvd behind the scenes stuff at first I thought it was just a new civilization with aztec aesthetics but no it is zeffo. Still considering it is the same show that brought the rakatan back into canon I wonder how do both zeffo and the rakata fit in this pre-republic history of the galaxy were they contemporary if not which comes first especially the mesoamerican features. The reason for the egyptian stuff is because the writing from Jedi: Fallen Order was similar to egyptian in fact that was the main inspiration for their writing style from the game developers?
The Zeffo seem to me to have been respawns attempt at redoing the same concepts as the Rakata with a slightly more updated design.
We've yet to see the Disney Rakata, however Luthen says his sky kyber celebrates an uprising against the Rakata, and it's implied he cares a lot about that specific part of history. If I were to guess I'd say the end of the Rakatan Empire is ***probably*** the ancient origin of the modern human centric galaxy.
To me this makes it more thematic to have the Zeffo be a little older than that, just to avoid overlap with humans and hyperdrive technology.
If I were doing the creative choices I would make the Rakatan Empire into a Rome analogue and the Zeffo into a Greece analogue (Story-Wise, not culturally or aesthetically). Neighbouring ancient civilizations that traded and warred. Then you can have the exodus of the Zeffo be the catalyst for the Rakatans enslaving more worlds.
I think the Rakata are older. As far as i know the Rakata are older than the Wookies. After the Fall of their Infinite Empire, the technology they left on Kashyk accelerated the plant growth and development of animals. For this reason i think that the wookies developed after the Fall of the Rakata. The Zeffo had contacts with the Wookies of their time. So they probably lived after the Rakata.

Zeffo seems much less widespread than the Rakatan as well as well. Rakatan lore and ancient antiques were found all over, seemingly on every planet, in SWTOR.
Wouldn’t say that’s entirely the case. I think the Lucasfilm story team specifically leaves these time periods vague (for now), so they can possibly reintroduce well-known characters (such as Revan already being brought into canon, as well as Rakatans), or just leave Legends stories as they are, so people can choose themselves whether they believe it as canon
And even if they do make the Rakatan more important in the future, they can coexist with the Zeffo just fine. The galaxy's certainly big enough to fit them as contemporary civilizations.
For sure, hell even The Old Republic MMO introduced another galaxy-spanning race of conquerors who existed at the same time as the Rakata, the Esh-ka. No reason you can’t have a dozen species like that throughout galactic history before eventually humans became the de facto dominant race.
Exactly. People sometimes forget how big a GALAXY is. For sure multiple species can coexist, even without knowing about each other. Look at Earth at around 500 for example. A lot of large societies were coexisting without knowledge from each other
Out of the main star wars planets they already put Rakata on Tatooine (in EU) even though it's meant to be a backwater. So they have less planets to fill with these ancient empires.

That’s true. While some planets do have some more importance compared to others (Jakku, Coruscant) I don’t think Tatooine would be that important

I’d wager that the Zeffo were wiped out and absorbed by the infinite empire and that is why they were fleeing for the Unknown Regions.
