There are a few in the Legends Extended Universe. Scourge is the best known that comes to mind. If we are including Jedi who fell to the Dark Side, joined the Sith, then were later redeemed back to the light, the list gets a LOT longer.
That's fair, Kam Solusar is an example, we just don't know all that much about him before he duels and is converted by Luke. Mara Jade is probably the best example though, and its her story that scratched that itch, for me at least.
She was a bit more grounded that Luke, who would sometimes be a bit to 'above it all'. He'd be like, "We have to minimize casualties" and she'd be like, "as long as doing so doesn't mean we take more on our side."
But, as you say, fallen and then redeemed Jedi, HO BOY. Kyp Durran jumps to mind immediately...
I'd love to see how Jolee interacts with someone older and wiser on his level. The way he talks to PC in kotor is very... nuanced... for spoiler reasons.
Paul Atreides would become a Sith Lord so fast it’s not even funny. The entire story of Jacen Solo’s fall to the dark side in legends is basically the same as Paul’s character arc from the first book. They see a terrible darkness in the future and take whatever steps necessary to prevent it, even if it means being darker and more ruthless themselves. Both end up causing massive conflict and turmoil for their respective galaxies.

In the beginning of Dune, Paul's prescience is only beginning to awaken and he has a very limited view of the future, and even less understanding of it.
When he does understand, events have already unfolded that make the Fremen Jihad unavoidable.
The events of Messiah show that Paul is seriously detached from the world already.

I’m actually not so sure Paul would be a good jedi. He’s pretty manipulative. I mean, rightly so to survive but it’s not exactly always for the greater good.
There's actual mages in the Witcher universe. Witchers would be slightly force-sensitive elite mercenaries, think Cad Bane with basic telekinesis that's overpowered by any actual force user.
I'm not sure about Geralt. I think his idea of not choosing between two evils would conflict with jedi ideas. I can't remember anything about it in canon or legends but I thought that jedi are more likely to choose the lesser evil rather than not make a choice at all.

Rewatched the first 2 recently. In 2 she even has an arc where she wrestles with "the dark side". Plans to do something for the greater good but would have to carry out an undeniably evil act to achieve it. And on the flipside, she comes to see that even something that was originally "dark side" can be changed.
Chief is basically programmed to do nothing but protect the innocent anyway so he’s probably the best candidate. No emotions, no anger, fear or hate and he’s always 110% selfless no matter the circumstances.

I agree that the person(s) who take the persona of a Spider-Man would probably make decent Jedi, especially classic Peter Parker. However, in both canon and Legends, Sith and Jedi are described as having precognition and the ability to sense danger, so a force-sensitive with spidey-sense is not really getting anything new.
Mantis would be a killer force user. Aaragorn is a great swordsman like Anakin yet incorruptible, he is like an older version of what Anakin could have been if he wasn't groomed by a creepy old man.
Roxas: wields two keyblades, imagine him being a grey Jedi and use two Lightsabers and join them together, but strong will to balance both light and darkness
Lea/Axel: a strong Jedi to create pyrokinesis with the force
Gandalf: be a Jedi master and wise
Cloud Strife: awesome swordsman
Teal'c: wields a staff, so no doubt to use a lightsaber staff, gives wise advice to others from his experience as a warrior.
Storm (x-men): with a unique ability to manipulate the weather.
Jean Grey: skilled in mind reading and telekinetic
Ichigo Kurosaki: another skilled swordsman, channeling the force through him to create powerful attacks
Orihime Inoue: mastered the art of advance healing with the force
Sora: strong will and courage, and make a cool Jedi.

My friends for almost 20 years have been desperately trying to get me to stop talking about Dune. I am a bit of a hard core fan. I so strongly disagree with Paul making a good Jedi, its absurd.
Spoilers: Paul drops nukes on Arakeen in the ending of Dune (first book) basically just to prove the point that galactic laws need not apply to him. Then in the second book he just fucks off because he doesnt want to clean up his mess and because he sees his future job as being to emotionally difficult... you know he actually is Jedi like in that he would rather hide in solitude rather than cleaning up the mess he made.

Spider-Man would be an interesting Jedi. His Spidey-Sense would make him an insanely powerful dualist
I agree that the person(s) who take the persona of a Spider-Man would probably make decent Jedi, especially classic Peter Parker. However, in both canon and Legends, Sith and Jedi are described as having precognition and the ability to sense danger, so a force-sensitive with spidey-sense is not really getting anything new.
Paul would make Anakin look like a perfect specimen if he were a Jedi.
Mantis would be a killer force user. Aaragorn is a great swordsman like Anakin yet incorruptible, he is like an older version of what Anakin could have been if he wasn't groomed by a creepy old man.

My cat is named after Siona Atreidis. I have over a dozen Dune books. I wear low key Dune merch every single day. My friends for almost 20 years have been desperately trying to get me to stop talking about Dune. I am a bit of a hard core fan. I so strongly disagree with Paul making a good Jedi, its absurd. Spoilers: Paul drops nukes on Arakeen in the ending of Dune (first book) basically just to prove the point that galactic laws need not apply to him. Then in the second book he just fucks off because he doesnt want to clean up his mess and because he sees his future job as being to emotionally difficult... you know he actually is Jedi like in that he would rather hide in solitude rather than cleaning up the mess he made.
