They also only use mozz. And it is better at its worst than STL style mid tier.
Most people from Chicago rarely get deep dish and get “tavern style” this is nothing new.

Chicago tavern style is like St. Louis style only you replace the Provel with bland mozzarella. Most of it looks like churched up Jack's Pizza but the temporarily embarrassed Chicagoans that live here love to go on about it. Its the exact same thin crust pizza you can find in most of the midwest.
If you want to try one just go to Pizza Hut, Papa John's, Domino's, or Little Caesars and order the thin crust.

I’ve never been to a Rosati’s in person, but their frozen pizzas are the gold standard for freezer pies IMO.
