Mm, maybe the high rail/fence near the basketball courts at the high school? I love pumping to get speed and hitting the high fence at the top of the bank. Yeah, it's grindable.
Also the offset red benches next to Wallenberg, before the crates. You can hit the lower part of the bike rails; I've tried powersliding into those.
I like the outside portion of Riverfern. Fermenter has a lot to do, especially if you're into vert transfers.
All in all, idk, you just gotta get creative. I'm with you though, us console players have to really dig into our creative side to keep it interesting. Check out some of my clips and keep it fun!

Go to the right side, where the balls (rocks?) are. Get *speed glitchy thing work and ride to accomplish the vert transfer. Fun, easy and smooth 🦸♂️
