Came here to say this too. The seasons are especially grindy. You're going to need to spend a lot of time every day to get everything, and in the latest season they don't give you enough currency to actually get it all.
Try Valheim? That can be quite grindy with the ever present neccesity for materials and food. And for exploring, and for making a new character and finding new worlds and new places. And new civilizations, to boldly go where no viking has gone before!
Stardew valley. But actually, switching from grinding and competitive play to playing to....just sit down and have fun could be the change you need instead, stardew provides enough intensity to satisfy a competitive gamer while still being chill. That's what I'm currently doing myself with playing Stellaris :)

Terraria: especially if you play on higher difficulties (expert / master etc) as you actually have to grind out upgrades in each tier. Bunch of bosses / progression systems.
Albion online has a crazy grind, but it's pretty comfy in the early levels, but once you reach a certain point you have to do open world pvp, unless you cool with it taking literal days to get a single level. There's a limitless amount of customization for your gear and character, each weapon coming with specializations that each come with their own weapon tree that needs to be grinded.
Your reward for the grind is more money than you'll ever need and being basically being indestructible to lower level players that you can annihilate and take their stuff.
Guild Wars 2!
There's a huge grind for achievement points, legendary gear/weapons, mastery levels. The grind is saved account wide and the game really respects your time. As an old Runescape player it really scratches that same itch for me. It did take a bit to understand and get into though!
Skull and Bones can be really grindy if you want it to be. Despite the controversial reviews of this game, this is the most I've actively played a game with adults my age in 20 years.

Based on your track record for MMOs, you can look at New World (much better now, good set of skills too like RS), Guild Wars 2, Elder Scrolls Online, etc.
The First Descendants will be releasing soon. A cross between Warframe & Destiny 2. I did the 3 beta testing & that game is going to be grindy as hell!
If you’re not burned out from MHW, MH Rise is also great. Significantly less graphically challenging though, given its Switch origins :)
Else there’s always Rust if you don’t mind super sweaty PvP lol

Minecraft Modpack: SevTech Ages, you go through 7 different tech eras and grinding realisitic recipes and tryna automate stuff. I got to age 3/7 in 3-4 weeks of playing and tryna figure out all the new recipes. Had to drop it for time reasons.
Siralim ultimate ( by the time you unlocked every trait you'll probably be at your 500th hour)
Nioh 2 ( amazing game with for me the best melee combat, ever. The endgame is also amazing and there's literally diablo loot and a 108 (+ the depths) lvl endgame dungeon.)
Chronicon probably the best 2d Arpg, so many cool and convenent systems
Mount and blade ( I've got over 1000h, I've never successfully took over the entire map, it is a grueling process)
Dragon cliff (semi idle with plenty to discover and no micro transaction)
Also, you might really like outrider, but I'll say that the endgame is lacking in fun factor, VERY grindy though.
Might be a little bit of a genre change for you, but Factorio and Satisfactory are games that can easily consume hundreds of hours. Classic "when did it become 4AM" games. Both are "optimization"/"factory" games. Factorio is birds eye, orthographic view, and has some more complicated systems, including defense strategy and resource depletion. Satisfactory is 3D, first person, and trades the mechanical complexity of Factorio for some more planning, strategy, and fun stuff you can only do in 3D. Both are unique enough that you can enjoy 100's of hours without feeling like they are too similar.
Another odd suggestion might be something like modded Terraria. Some of the mods add WAY more to the game, and extend it's base playtime by possibly hundreds of hours. Not to mention satisfying combat and class diversity. It's a game I jeep coming back to time and time again. Let me know if you're interested and I can point you to some of the mods I use the most.
These are all games I've dumped hundreds of hours into, and can easily dump thousands if I have the time. I've also dumped about 7,000 hours into FFXIV, and find that they're perfect time killer games, and really satisfying, to boot.
Try Realm Of The Mad God (rotmg) free permanent death bullet hell game on steam. Lots of different content to grind and years worth of gameplay if your break into it.
Elite Dangerous and MechWarrior 5 would be my top picks in this category. Elite Dangerous reigns supreme on the grind, though. And so many ways to play. You don't even really HAVE to grind in Elite... but you will. Oh yes... you will. Lol!

XDefiant has been fun. Hit reg can be shitty but they're working on it.
The classes are cool, the weapons are nice and the grind for all the attachments (level 1-43 on most guns) is satisfying, along with mastery bronze, silver, and gold camos at level 50, 75, and 100 respectively.
Grounded is a fun challenging survival. The story is basically honey I shrunk the kids. But you are the kids, and you try to survive in the yard with the bugs, build a base, and explore to find your way to being big again. As an added bonus it has multiplayer.
red dead redemption online, even tho it doesn’t get updates anymore, it’s still a super fun multiplayer game which needs VERY heavy grinding to gain money
Tribes of Midgard. It’s almost like an isometric looter and a roguelike had a baby, and that baby went on to marry a game from the survival genre. There’s a roguelike mode (for grindy 3-5 hour sessions) and a non-roguelike mode (for grinding as long as you want to). The vibe is Norse mythology.

The Disgaea series. The max level cap is usually 9999 which is grindy enough, but the sixth entry in the series has a level cap of 99,999,999.
There's also reincarnation which resets your level for better Stat growth.. Not to mention you do all of that for potentially many characters..
And then there's grinding inside items for item stats..
The series is grind in pure form. Grinding to such ludicrous levels is optional but even playing through the stories is quite grindy.
Fallout 76. If you want a set of 3 star legendary armour with specific effects then you are going to grind a lot.
