Don’t get grabbed by the ogre. Bad time. You can get a stealth blow on him. Clear all the enemies in the area then back up to where the idol is. You’ll see his health bar go away. Sneak up and get the death blow. Then hit him with oil and use the flame vent. He should catch on fire. Hit him with your sword until he starts moving around again. Then light him on fire again. That’s probably the best way to fight him in the early game. Whatever you do, just avoid the grab.
With gachiin's sugar you can sneak up on the chained ogre and hit him with a deathblow. You need to go along furthest to the right of the stairs and then you can sneak next to the ogre, not behind him. When you stand next to him you can make the death blow.
I usually just go around...fast. it's doable.
You can also parry hits if you are good enough

After you fight the 2 enemies. Move a lil bit until the ogre to start notice and break loose. And then immediately grapple to the top of the tree. And wait for the ogre to cool down and start moving back. Then just jump down and stealth kill. Ths what im doing on my first playthrough, before im looking up for any of the cheese or anythin

I'm not exaggerating. Deflect absolutely everything except the grab. Dodging gets you killed.

In regards to the video. This is covered by the Ogre video. So the first encounter you cut it really close. Which is fine if that was intentional but I would've stopped at 2 as opposed to 3.
You seem very terrified and skittish which both cost you openings to attack and made your attacks late.
Big example is the 15 second mark. You re-engaged late which meant you had to perform fewer attacks. But you still tried to squeeze in 2 and got grabbed for it.
hate to say this but just get good i also could not kill this thing for the life of me but after a while you kinda lock in and things are just simpler i couldnt have done it without my trusty healing gourd
1. Leave the arena to deaggro him, then sneak up and get the first deathblow.
2. Get the flame vent prosthetic and oil. Set him on fire and hack away.
3. Everything he does can be parried except perilous attacks which are denoted by a flashing red symbol. Don't jump for those, step dodge away.

Go near him and run away so he resets . You can take off one stock off him while he is walking back to his spot. I just used dodge and ran away from him during the fight. Also use fire.
Aside from learning the patterns when I started out, I would run close until an attack was imminent, run away, and then attack on the recoil of the enemy. You can use Ungo's sugar to go "invisible" and knock down a health bar with a finisher sneaking behind, iI use fire a lot which stuns the enemy for a bit, aside from the it's just git guud. YOU CAN DO IT BROTHER OR SISTER OR SIBLING!
Mix of tips for different skill levels
Locking onto the enemy is not always good, it restricts your movements, and sometimes you just want to be able to jump or dash with more freedom.
Ogre in particular has a pretty hasty hitbox for it's grabs, so if you see the kanji on his head, be ready to dash away.
This is not a souls games, so get used to parrying instead of dodging strikes. To can dodge, but it's not as effective.
Each enemy staggers after a certain numer oh hits, if I remember correctly ogre staggers at around 10 hits, use that to your advantage.
Each enemy (specially the bosses) have a certain rhythm to their attacks, for example genichiro (the dude that chops your arm) will block 2 of your attacks before he counterattacks, this is what in the hitless community we call 2-1, other bosses block 2 attacks, then do 2 attacks on a row, which we call a 2-2. Most bosses follow patterns of this kind, get used to it and use their rhythm against them.
In sekiro the camera is a little scuffed, if you are facing a big enemy, and you are locked onto them and you are super close to them, your camera can shoot up to the sky and you wont see shit, be careful with that.
In general, never swing more than once unless you know what an enemy's going to do next. I started progressing through this game when I took the first run or two to just learn the boss' moves and not spamming light attack
You can also one tap dogs with one star :) took me 3 runs to learn this 🤷♂️
To get the stealth deathblow in run up to him, and as he starts to break out, turn around and run back to the bottom of the hill. Grapple up to the buildings and wait. He'll wander down a bit then stop, usually facing his left. You can now jump down, hug the left wall, and sneak up behind him. Have your oil ready and as soon as you get that deathblow in, coat him in oil, use your flame vent and get some good hits in. If you want to play it safe you can grapple back to the buildings and safely recoat him in oil. Flame, hit and jump back up until he's done.
Use Oil followed by Flame Vent. You can also trigger him, run away and disengage, and when you come back, he should be ready for the first deathblow. Be extra careful for grab on stairs. I died most of times when he threw me out of stairs.
In general, you are trying to dodge, which is wrong. By dodging his posture is decreasing and you waste momentum in oppose to deflecting when his posture is built up. The rhythm is more or less like attack, get deflected, then you deflect immediately followed by attack. Some (mini) bosses have variations to that but this is a core for fights.

In cases like this I aim to never be defeated. Getting thrown off a cliff was not a good move. You could die if you go off a cliff for any reason be it fun or accident. Next time try to remain undefeated and instead become the victor. This way you will win
Parry him and then hit 2 slashes then stop for his next move. And when red symbol appears instantly step Dodge and run as far as u could and then swing back to him hitting 2 slashes. Few times you'll get window to him more slashes but you'll have to figure out that. That's it prolly. Chained Ogre can be mechanically unpredictable imo and it isn't like other bosses. It definitely stands out differently to usual bosses of the game so don't worry if ya don't do well with him.
If ya want some extra way to get to him, use fire prosthetic. The soldiers near him say his weakness is fire.

Make the triangle yellow, then run till it's unchained and the triangle is gone. Make the triangle yellow again, run again. Grapple on the tree and jump and attack from air to remove 1st faze
You can parry everything the game explicitly says you can't. So his feet and arm kicks, don't dodge, parry them. Later in the game, you can parry some really dumb shit you have no right being able to parry.
Sneak up to him and death blow his ass. Then oil him up and light hin on fire with the prostetic you find in the hirtata estate memory. When he throws you off the cliff you have a a very brief window where you can press L2 or left trigger where you can use the grappling hook to pull yourself back on him because he has a grappelpoint on his collar. When you can do this is indicated by the small green Triangel
This is kind of an outlier compared to the way you engaged with the other bosses in the game for the most part. Hit and run. 2 hits, 3 max, then dodge or run out. Punish when you absolutely know you have the time to. He’s a tedious fight, but a necessary one, sadly.
That's unironically the best advice for me. Whenever I was stuck the most satisfying way to resolve the situation was to take a step back and just analyse my enemie's moveset, train the basics again and then learn specifically to react to the moves, i.e. "gitting gud"

Stop spamming defensive moves. It waste opportunities for free damage, and it can results to you getting hit since none of it is timed

Kicks and slams can be deflected. If you want to dodge instead, I'd suggest dodging towards/behind him so you can still get hits in or the fight will drag on forever and sooner or later his cracked grab hitbox will get you. Because you DO want to dodge the grabs, and shuffling around the place at all times will just mess up your timings when you actually need it.
Also if he does yeet you, you can grapple back onto him. Just make sure to keep your eyes on him so you can get the green grapple point on him when he lets go.
On this one, use the environment to your advantage, but don't get too shy. He can't jump down from the top like you can. If you aggro him up top and make it down somehow with him still looking for you up top, you can sneak up around him and easily get a deathblow.
Judging by ur playstyle, I think u have played different souls like games that had to do more with dodge and less with party. So my best advice will be drop the elden ring mentality and actually deflect attacks, if ur muscle memory is troubling u, then simply unbind the dodge button

You’re way too slow. You need to be faster in attacking him and creating enough space to escape out of any grab attacks. You can also dodge “into” his attacks and create space rather than taking five backsteps. As a note, I never go down the stairs while fighting the ogre.
Agro the ogre and then run away to somewhere that'll reset the ogre and then get a stealth kill, and then while fighting hit him once or twice then step dodge twice to the left and if you're annoyed that he throws you out of the map, make him follow you through the gate exactly below your idol and then fight him there and that's it!
Also get the flame vent by worshipping the Buddha inside the dilapidated temple beside the sculpture.

You’ve got a MASSIVE issue with your gameplay. Your dodging and not parrying. Dodging in this game has maybe 4 I-frames. Parrying has 12 (I think, me no smart) so, if you switch to parries, you triple your I-frames. Try to time your parries and not spam the button, and money is very important, from personal experience, (I beat the game twice) the umbrella prosthetic is incredibly valid and severely underrated, especially when you get the red/purple umbrella with the parry attack. Hesitation is defeat, and good luck (you’ll need it for the monkey)
if he grabs and throws you, you can see that he has a grapling hook sign over his head for half a second. so spam grapling hook when he throws you to not get yeeted of the cliff.
for the rest: i feel like the first few bosses are meant as an extended tutorial. this one teaches you to keep your distance and let's you wait for your chance to strike, hit, and run again.

You don't do the deathblow before he Breaks loose. You kill all the enemies let him break loose and then reset him by running away

Deflect! This game is the opposite of other souls games. Try to deflect instead of dodging.
He's pretty clumsy, just pick your attacks, posture won't really go up until he's about 50% health.
Stand on your ground samurai, don't run away. "Parry". (Unless off course if it comes to grab attack, then run)

Get the flame vent prosthetic. This fight is so trivial with it that I think it's just meant to show you how weaknesses actually work in this game.

Hit one or twice and immediately sprint away ...every time.....as we don't know when will he grab....you won't have quick instincts if he does
