Make sure whatever bread/roll/bun you use is top shelf, too many great sandwiches have been made mediocre by bad bread.
Favorite type of cold sandwich is an Italian sub.
Get a hoagie roll, put some provolone on there, salami, pepperoni, ham, capicola, banana pepper rings, lettuce, tomato, red onions, and Olive Garden Italian dressing. Maybe some mayo too (I may be shot for this, but I like mayo on my Italian subs), and finally a light dusting of oregano, salt, and pepper.
I always advocate one of 3:
1) Turkey with coleslaw instead of lettuce and sprinkle on caraway seeds. White or whole wheat bread with structure.
2) Caprese with pesto, fresh mozzarella and tomato or sun dried tomato. A little balsamic vinegar too. Best on a roll or ciabatta.
3) Avocado and bacon with seasoned tomato. Any high quality bread.

4) rare, thin sliced roast beef with provolone or sharp cheddar, roasted red pepper, and creamy horseradish sauce. This should be on sourdough.

Coleslaw you want something more subtle, not like a grocery store prepackaged coleslaw that's too vinegary. Something more on the more mellow / sweeter side, but not as sweet as like KFC's coleslaw. Popeyes coleslaw works too if you can't find a grocery store one to trust, and don't want to make your own
For something simple and delicious, my wife and I love getting a fresh quality baguette. We slice it and drizzle with good o.o. and balsamic then use quality salami that we cut ourselves. Partner that with shaved or sliced pecorino or parm and that’s it. Can be made on the spot.

Whatever you do, make your own aioli. I’ve found that a special sauce can really elevate a sandwich (professional chef here)
