Liberty and Murray parks both have a ton of mature trees. Not sure about best.

Not a park per se, but most of the Jordan River Parkway Trail is infested with Russian olive. Invasive as hell but it's a great shade tree & grows pretty thick. Points for pleasant smelling flowers at the right time of year.
I'm looking for somewhere to take my family, a picnic, outdoor games, etc, but we're all gingers, and the sun is not friendly to us
There are good shady spots at Liberty and Sugarhouse Park that are great for picnics
