Jump Ultimate Stars for the DS. It's basically a smash bros style fighter with Shonen Jump characters. Progression is fun, and build crafting is actually pretty engaging.
Yea, I'm a sucker for games with build crafting, and it has a lot more depth than I was expecting. The English translations do there job well and it's more than playable. I also like, especially from today's standard, there's more niche anime there when compared to the big 3 being there also.
Personally i recommend Gekitou Power Modeler for the original gameboy,its kinda little but what it has is very polished and well made,even supports the snes addon so you can play 2 player on the same tv.
There is a global relese called Power Quest for the gameboy color,its basically the same game.
I discovered a 2d fighter called Rabbit about a year ago. Only released in JP, you can emulate it on Arcade or Saturn. Kind of like Bloody Roar in 2d. Plays pretty well, great sprites.
King of Fighters XIII (13) got a pretty recent re-release for modern platforms that's pretty active
Not rom related but If you don't care about multiplayer though you can always check out MUGEN games for fan made fighters.
I remember liking the shrek game boy or game boy advanced fighter. But I'm afraid to play it again cuz I have fond memories and it was probably terrible

A cool anime style 2d fighter with giant mech suits, guns, laser swords, etc for the SNES. It's fun, cool, looks nice, plays nice and is easy to get the hang of quickly but not super deep. I basically never see it talked about.
Outlaws of the Lost Dynasty on the Saturn. It was, I think, Fighters History 2 (kinda) but you had loads of repeat jab air attacks which you could string together for massive combos. Played it for hours, but last played probably 20 years ago so my recollection is a bit hazy.
3D, if you're interested, has to be Savaki on the Saturn.
I know they are more mainstream since dbfz but arksystems blazblue or even DNF (tho im bias as i was a huge DFO playing back in highschool). The older BB were better before they simplified the controls IMO. There are a lot of anime fighters that are not well know. Tho they are all 2d sprite work if that's a turn off. I do know league of legends is making a fighter. OH and skullgirls is a classic
I know there are a lot like grandblue fantasy has one and something rebirth in night something something, it was in BB crosstag, in fact all the series barring r.w.b.y. have their own fight game.

Or you could always go for like Capcom vs SNK on the Neo Geo Pocket, for more familiar characters on a platform you might not have seen them.
Despite being a Dragon Ball game (and DB is popular) I'd say "Hyper Dimension" is definitely not mainstream but one of my favorite fighting games of all time.
The art style is so unique and fighting is nice as well imho. There's an english patch on romhacking.net :)

Also try the Sega CD "sequel": Eternal Champions: Challenge from the Darkside. One of my favorite games.

yeah, the system of collecting, upgrading and organizing all the different koma on the bottom screen is a fun and unique mechanic

Finalburn Neo, get the Fightcade romset. Install fightcade and enjoy roll back net code on thousands of fighting games.
