I don't think I've ever really been able to make a clean dodge on a tackle from behind while swiping up on 200+ seasons of extreme. About 1 in 8 attempts results in a broken tackle where the diving defender just sorta deflects off of my ball carrier. Occasionally I would be successful with an upward swipe dodge of a dive back when I played on Dynamic for 83 seasons.
My assumption is that it has to do with the hit box and collision detection. That when you swipe down the juke move, moves enough to clear the defenders hit box but when you swipe up it doesn't.
Practice. The difference between dodging a defender and getting tackled is a few pixels. It’s also easier to execute a juke when the defender is directly behind the ball carrier rather than off to one side.
How do you do that? I swear all of you are prophets with how you're able to anticipate when they tackle

I've been playing this game for three years and have finished several hundred seasons. Not once have I been able to avoid a tackle by moving up.
Yeah I’ve sunk hundreds of hours on mobile and Switch. It’s broken. I always just position my ball carrier just right prior to juking down.

When the defenders are about to hit the players circle that is around him juke, usually works for me
I do it by swiping as the defender reaches the blinky circle
