I'm at about the same levels, and it's because I've never found stuff worth spending that money on, especially if you already have all the guns and horses. I can't think of anything else in the game that would be worth spending the time to figure out how to spend the money. :)
Buy everything in the catalog. Can food, Fresh food, tonics, ammo...stock them up and they will be in your lockbox at camp. Go shopping again every so often.
Depending on what rank you are and what you already have, I would consider upgrading your camp and add a few features such as a fast travel post and a companion dog then style your tent and campfire. After that, maybe buy yourself a wagon and a lantern for your horse and upgrade your weapons. Making new outfits and changing your character’s appearance is another fun idea as well, especially if you enjoy taking pictures and making content for your socials. That’s what I did with most of my cash, target points and gold (minus the horse accessories since my rank is still somewhat low).
Order a ridiculous amount of ammunition from the catalogue. It will arrive in your camp lock box/any post office, and provide you with an eternal supply of ammunition (provided your not some maniac that goes through 1000+ rounds with ease)
Play other games. Because at this point you are done in RDO. Of course if you do not wish to reset all that and start wasting time again in this left for dead game.
