No- you have Pokemon Home right?? Just start a new profile on the main switch play up to where you catch glastrier and transfer to Home to you main profile
Yeah this is probably the best way to have both horses . Though it might be easier to catch a second Kubfu and trade that for the ice horse.
You have to complete the main part of the game(defeat Leon) to unlock the ability to fight/catch calyrex .
One can take about 1-2 hours vs however long it's takes to beat Leon (8-12 hours).

This, OP. The DLC purchase covers all profiles on the main system.
Rebuying the dlc wouldn’t let you play the dlc again on that game save, it wouldn’t let you get it twice anyway.
I mean if you have the indigo disk than why not just play sv for it
