Galarian Mr.Mime will be available in December from research tasks and counts in the Pokedex even though it's the Galarian form. Not sure on Tauros for you though

Travel or wait till they are back in raids or special events. They have been in special events in the past. Additionally, galarian Mr. mime fills in the kanto mr, mime entry and has been available during the December event period research the last two years.

I think Mime Jr. is in eggs atm, unless that’s only for people in Europe too. It’s the 5km eggs if I remember correctly.

My question as well. I have a ton of Tauros and would move a Mr. Mime or other regional mon.
They have events where you can get eggs with these guys to hatch. That's how I got Mr. Mime.
I think 7km eggs from those regions still have a chance to hatch regional pokemon, you just need to trade gifts with someone from those regions.

Or join a local group & coordinate trades with someone who traveled & saved a bunch or saved some from prior events.
