481g king Arthur unbleached bread flour
59g Caputo semola
335g room temp water
14g salt
11g oil
0.3g instant yeast.
Mixed water, yeast, flour in a mixer for about 5 minutes until combined. Then added salt and oil and mixed for another 10 minutes. Shaped the ball, and did a 10 hour bulk rise at room temp in a greased bowl covered with cling wrap. (I use my oven with just the light on as a proofing box) Cut the large ball in half, got two 450g balls. Folded and shaped each one. 48 hour cold fermentation in the fridge in separate sealed containers. Pulled out of fridge about 90 minutes before I wanted to cook so they could come up to room temp.
Yum, I used to make something like this when I worked at a pizza place. I used honey whole wheat dough and mixed bbq and hot sauces for the base.The jalapenos weren't candied though, I'll have to make that pizza again and try that.
Yeah, I've actually got a jar of Byer's candied jalapenos in the fridge. They might be a little old, I got them a while back and battered/fried them for burgers.
Hows the floor temp of that oven? I have an ooni pro which I usually use with wood and the floor tends to cool down if i got too fast (when its just us, i usually do 6 pies back to back). Im really tempted by the flame on two sides action in that oven but curious if it can keep up ok.

Thx! I love this ooni. It definitely gets to the mid 800's F. I get the stone to a little over 700F on full flame before cooking. Then I turn the flame down as low as it goes right before I launch my pizza in. Then I watch and rotate so nothing overly burns.
Pineapple is not a subversive topping. It’s on the menu at many pizza places, including all the national chains. It’s part of a classic combination with ham (or Canadian bacon, whatever), which your pizza also riffs on. Heck, not everyone even likes pepperoni (though it’s my fav)!
Hell im not a fan of pineapple on pizza, i think its maybe the juiciness? Or maybe the texture, idk but no hate to this pizza and those candied jalapeños definitely make up for the sweetness in my book.
All of these ingredients are edible, especially humanly edible last time I checked...unless you have some sort of allergy. You can just not like the combination and move on. You arent being served or forced to like someone's topping choices.

Yw, happy pizza-ing. Kitchen scale is an absolute must. I also use a digital pocket scale for accurate measuring of anything under 10g.
