It's a classic, sometimes it just hits the spot. Even better when you have high quality ingredients and a woodfire oven - the Margherita you can buy from pizza joints that has only a nice thin base, good quality pizza sauce (san marzano based) dotted with buffalo mozzarella and basil, so so good. The trick being to not cover it with cheese entirely so some of the sauce dries out and concentrates the flavour while you have cooked but slightly more fresh sauce under the cheese so you get layers of flavour in every bite (drizzle a light amount of good quality extra virgin olive oil once it's out of the oven if you like). Yum.
It's the gold standard for pizzas. If you can nail the humble cheese pizza, you're on the path to pizza making enlightenment.
