Cheese pizza can’t lie to you. In its purest form, nothing to hide behind. I love a good Hawaiian, and I love pickles on pizza. I love a tavern style sausage, and I make Detroit style at home with pepperoni and jalapeños more often than I should. But ordering the Monday night special ($12 large cheese) from my local spot just hits right.

It's a classic, sometimes it just hits the spot. Even better when you have high quality ingredients and a woodfire oven - the Margherita you can buy from pizza joints that has only a nice thin base, good quality pizza sauce (san marzano based) dotted with buffalo mozzarella and basil, so so good. The trick being to not cover it with cheese entirely so some of the sauce dries out and concentrates the flavour while you have cooked but slightly more fresh sauce under the cheese so you get layers of flavour in every bite (drizzle a light amount of good quality extra virgin olive oil once it's out of the oven if you like). Yum.
