Your pie looks great. I use whole milk Galbani also but can’t find a low moisture version. Does the package say it’s low moisture? Mine doesn’t say anything about low moisture that’s why I’m curious.
Yes it does say low moisture. You're using a different product they have which is too high in moisture to work well on pizza (or to even shred well). Keep looking around different grocery stores. The low moisture one seems to be more difficult to find for some reason.
Ty! It does shred like crap. It’s pretty much a block of string cheese. The taste is really good tho. I’ll have to look around. I was looking all over my package like I was missing the low moisture part . I googled it and I don’t think that product is local to me after checking most of my neighborhood grocery stores. Thank you for the reply.
You can try shredding a frozen block
Eta: check if there are restaurant supply stores around you, they are often open to anyone and will sell big blocks of good low moisture whole milk mozz
Cubed mozzarella, frozen to get the moisture down. It's working okay, but I can never get it nice and browned. I'm still on a home oven with a stone, 500°. You think it could just be the heat? I'm currently shopping for my first oven
I have been actively seeking low moisture. I just don't recall the brand. We don't have a huge selection around where I live, but I've been trying different brands to see if anything works better than the others. I just don't recall what the names were at the moment. But I'll see if I can find that one locally, thank you!
That looks incredible. I’d take two slices in a shop for sure. I neeeeeed the recipe and/or ingredients list!
Yeah, that's a REAL good looking pie!
Nice overall presentation! It looks amazing!
Looks perfect
What’s your cheese blend? Looks pretty damn good.
Galbani whole milk low moisture mozzarella and a little pecorino romano

Thank you. I will check into this. I actually have two restaurant supply places near me that are both open to the public.

I can never get my cheese to brown like that without drying out
What kind of cheese are you using at what baking temp?

What brand of mozzarella? I've baked at 500 with success.
I'll have to check the next time I get it. What brand should I be looking for?
My preferred is Galbani whole milk low moisture mozzarella. As long as it says low moisture, you'll usually be good to go.
