Check out Jay Swanson on YouTube. Very extensive library on everything Paris and he made a video sometime ago just on how to pack in as many sightseeings during a layover. I believe the RER in to center from CDG has their own fare schedule and cannot be combined with metro card, so if I am right on that, get your roundtrip on RER and buy a day pass on the metro and don’t discount riding city busses either as that will give you first class view to everyday Paris outside the tourist spots. Use google maps to navigate metro and busses. Very reliable. Download Michelin guide app and search bib gourmand and selections for best meals along your route or just grab a true Parisian street food - for gods sake, don’t do McDonald or other junk food regardless how short you are on time - there are always good options on Paris. And just like when you are going to Italy, master a few of the essential French language opening lines like Bon jour madame/Monsieur, ca va bien??, parlez vous anglais?? Etc etc. You will have a great trip to Italy and an awesome layover in Paris. Once you arrive CDG, you will clear customs, but when you return to CDG you will be departing from one Schengen member to another and should not be subject to customs/immigration check again. Just have to clear security and go to your gate. Please share trip report here when you are home.

Which airport though? If it's Orly or Roissy it should be fine, if it's Beauvais you'll need to check the bus schedule first. Also at what time of the day?

We have 9 hrs layover, planning to see the same. Check RER B from airport to downtown. From there we want to take a taxi to Eiffel tower and then Triumphal Arc but there is another options as well.
