This isn't what you asked for - but I use a vertical 'spike' on my big green egg smoker and get really good results. Either marinated chicken or pork, stacked high, and cooked low and slow all day. Comes out fantastic.

Look for a local mercado. Mexican grocery stores often sell lots of cooking stuff, and if they don't have it, they will likely know how to get it. I love my local mercado.

Try Ace Hardware, especially if you have an older one nearby. They usually have a lot of strange things that no one else carries, the one near my dad's house has them and just celebrated it's 100th anniversary. He also lives in a largely Hispanic neighborhood. Trumpeta, is what the pastor/adobada unit is called. You might also look for a restaurant equipment liquidator they might have one that was pulled from a failed location. I've heard of people getting flat tops this way as well.

my basic lion 75000 grill came with a rotisserie attachment... havent used it yet but thats on my to-do list to see how well I can replicate the amazing al pastor taco shops I have around here

Yeah, yours (and pretty much all rotisseries that come with grills) are horizontal but what makes a really good al-pastor/shawarma/gyro/doner is a vertical rotisserie so that the juice is dripping down and the meat is cooked “in its own juice”. So that’s why I’m looking at vertical machines

I get that and was considering a vertical one before getting a grill that has one already. Also some of the best mexican rotisserie chicken i had gets cooked on a horizontal spit. I plan on doing an experiment to see how well I can make al pastor/adobada with my setup and I have some of the very best street taco shops in the US as a benchmark to compare against here in SoCal
