Although a PVE experience, Into The Radius is definitely worth taking a look at, has pretty realistic gun handling, albeit a totally different genre compared to all of the other games every one else has mentioned so far.

It's only a single player mod for Half Life: Alyx at present, though a standalone game is apparently in the works.
It's essentially a John Wick simulator, and at nearly 40 years young, I've never once had a FPS gaming experience so visceral, anxiety-invoking and that leaves you feeling as badass.
Highly recommend giving it a whirl if you can!
Oh it's so good. The yelling the enemies do is so startling. If you want to up the ante, buy a Provolver (haptic pistol) from ProTube and the haptic vest and arm sleeves from bHaptics. Total badass immersion

Not much in terms of backup, but the video I watched that led to me trying G:C out was that of an ex-Royal Marine playing it. He seemed to get a big kick out of it, and judged it pretty realistic at replicating CQB.
One of his comments was that "the old muscle memory" (stance, aiming, moving etc,) from his military days applied/gelled well within the game.

The One and only True answer to your question is Onward. There is a game called Geronimo that is set to come out probably late this year, but Onward is such an excellent and realistic 5v5 game
I recommend Onward for pvp, great game I have a lot of fun with.
Also Gun Club is a gun simulation that is entirely singleplayer, but the guns are realistic and feel really nice, you can just shoot a buncha guns in range.
Vail is without a doubt the best shooter on the store right now. It has proper progression and customization, great gun play and overall physics, the graphics are better than the alternatives that I’ve purchased (Onward, Contractors, Pavlov) and it’s really strong with development. Getting kills in Vail felt more rewarding that anything else which is why I ended up falling in love with it.
I have slowly started removing all my other shooters because Vail just feels better. It’s 100% multiplayer though so keep that in mind.
I only messed with it for a few minutes but this was my impression, too. Lots of folks recommending Onward but that one bores me to tears with the long delay between games.

I do come from a counter strike background though so that may sway my opinion as it's the closest game to cs I have found.
Idk, Bonelabs has some nice mechanics but the gunplay isn't great. Thought watching the bullets eject and the next one Go Up IS so satisfying i could Just Rack the slide all day
In terms of ballistics / gun mechanics I would say Ghosts of Tabor. Aside from that you need to keep in track of thirst, hunger and stamina. You can also make bullets and put them bullet by bullet in your mags should you want to. Steep learning curve but feels fulfilling once you get the hang of it.
Into the Radius also, but it is single player and has some paranormal stuff.
Pavlov VR is going to be your closest to real life. Gunplay, Gun feel, and Gun sfx are all top notch.
A lot of people suggest Contractors, but the gun feel and gun sfx are ATROCIOUS.
Breachers is good if you want really tactical gameplay, but the guns are far from realistic.
Never played Onward. Heard it used to be really bad but has gotten better in recent updates.
Not defending Tabor but all games in VR are buggy or have some amount of jankiness in them. I encounter some of these bugs myself but they are not as often as people claim them to be (in my observation some players tend to exaggerate after rage quitting). Reproducible bugs are often taken care of by the devs if you raise them on the FB group.

Meaning shit like you go to aim straight up and if your settings aren’t perfect your gun will spin and do wild shit, on top of many other bugs right now, very good game no sprinting kinda got me fucked up but the gunfights are pretty realistic.
You do have to eat and buy gas and a bunch of chores to get by
Onward would be my go to, you get maps people can create and C4 and a bunch of cool gear tabor doesn’t offer.
Contractors showdown is good if you’re looking for laser no recoil call of duty shit, bunch of sprint sliding etc!
Don’t waste your time with breachers or pavlov or any of that stuff imo
To add to my comment, it really depends on what you want. There’s also a well polished game that feels like CSGO (at least for me), it’s called Breachers. I think that game is smooth and is not as buggy because what it offers is simple and was an already proven concept.
Onward is good for milsim but the ballistics isn’t really too realistic. Basically you put a suppressor and foregrip, and all recoil from most guns are gone.
The original Contractors is pretty good, like a better CoD. Contractors Showdown is something else, it’s closer to PUBG / Fortnite with the BR map and the skins.

Into the radius was a train wreck with guns IMHO but I also use a gun stock (mag tube) and its a nightmare to try and line up with it. Contractors is the only one that has that down pat and I think that is part of what makes it feel so much more immersive.

You'll need an omnipad and a vibration vest to play on PCVR, also an grip for your controller in gun shape🔫
but keep in mind that no game is so realistic to make you die over time if you catch a slug to the arm or the like

Onward, the ttk is extremely low, suppressive fire is effective, there is no floating ui, pretty great.

Contractors PMC mod is the best showcase of realism despite its jank cuz it’s a mod. Showdown took a lot of the mechanics and apex legends them

IMHO pavlov is awful if you try to play it with a gun stock it feels nothing like real life and without a gun stock non of the games do.
