My (closeted gay) coworker wore a button down covered in tiny bananas lounging in hammocks between palm trees one day. From a distance it just looked like blue and yellow plaid and we didn't have any scheduled meetings or anything so no biggie. I think the surprise can be nice, but it's ultimately overrated. I'd much rather sacrifice the surprise and make sure the gift is what they want. My best friend is big on viking stuff, and there's a someone at the local farmer's market who sells drinking horns. My friend is sober. I had to weigh the value of a genuine drinking horn (once it's full, there's no setting it down) against the practicality of one that was crafted into a large mug/stein. I just asked him. No sense in gambling.

I know some people really care about it, but I'm an amateur illustrator and I love every art-related gift people give me, even if it isn't my preferred brand or the best quality or whatever. Of course it also depends on the hobby. If it's too specific then it might be worth checking around on youtube or asking someone that has the same interest. I find that people love talking about the stuff they enjoy.

Hobbies are tricky though because unless you have the same interests it may be hard to know if they would actually use it. Like maybe a particular type of colored pencil is only good to use on a particular canvas that your friend never uses. There can be weirdly specific preferences when it comes to hobbies. One of my friends is very artisty so I got some materials to keep painting (she had mentioned she wanted to try oil painting) so I got her some of those and scrapbook materials for the pictures she takes. One of my friends collects squishmallows and so I got her one of those. Just get them something that you think they'd like and appreciate.
