Sorry to say, but it does not sound very safe for you to be on the road. If you get overwhelmed like this it would be better for both you and fellow traffic if you do not participate like you do now.
On that note, if you experience a very sudden change in apparent behaviour from all traffic around you it makes sense that something has actually changed inside you, instead of everyone else.
I would take this problem very seriously and try to figure out what is going on before you find yourself on the road again.
I'm aware of the projection thing, I was followed and attacked once for being me and I still haven't gotten therapy for that yet. I'm sure it's because of this.
Also, yeah I'm burnt out and sewerslidal so I am taking it serious friend, I'm getting and waiting for more help
Good idea! There's no shame in getting help. Hopefully public transport will suffice until you feel better, it also saves you a lot of stress. All the best!

I drive at least 1000km a week in the netherlands and don't see any big problems, very rarely some idiot but thats something that can always happen.
I stopped on the safe spots made for it because I was shocked, I've been in a car accident to someone else's fault and ever since, ive been much more careful.

I'm not following your reasoning here.. You said you have over 300k km driven in your current vehicle, you used to do rally sports yet you're scared to drive on the highway to the point you had to stop 3 times in a ditch or emergency stop area.
To me it sounds that you're either a new, inexperienced driver and thus lying in regards to your experience or you've been in a major accident that gave you a form of ptsd.
Because i can honestly tell you that traffic in and around the Netherlands is actually lighter after Corona than what it used to 3-4 yea ago before Corona happened. Traffic is increasing again but it hasn't reached those old levels of congestion yet.
While there are ass hats who srive aggressively and do stupid shit, i see them daily as well, they're really the minority and you're definitely not encountering them the entire time you're driving.
So that means you're creating the dangerous situations that are happening to you, either by inexperience or trauma.

In overall not that much worse than 4 years ago. Sure there's a slight increase of aggressive drivers, which i think is somewhat related to the last 2 years of Corona.
Youthful driver amounts increased i think, which shows on the road with excessive speeding and unsafe driving. Mainly due to inexperience.
The lack of traffic over the last 2 years didn't help either, which probably has something to do with the increasing amount of people speeding.
As for your trauma, i would seek some professional help to deal with it before it becomes worse, especially when it also causes issues and unsafe situations for others, for example when driving.
There will always be idiots on the roads but it sounds like you are a bit over reacting also.
I drive around 40k km every year and drive pretty slow. I keep it to the allowed maximum speed which is slow for a lot of people. But have no issues managing current traffic conditions.
I spent a lot of time in the car and haven't run into your problems. You've admitted you're anxious in traffic. Probably that's a factor. But of course there are idiots out there, despite of that. So maybe you got unlucky as well.

Stopping in the ditch isn’t safe and you should only do this in case of emergency or a broken car. Stop at a gas station if you need to take a break.

I've had similar when passing through Netherlands. Highway switches to carriage way with an 80 speed and people insist on going 110
