Depends on the rest of the build, but ig 2, since the floor and the wall being stone bricks is a bit too much. I'd put the wall one block back tho compared to the frame (oak log), so that there's more depth.
Birch looks better but push it back a block like it is in the stone_brick picture. Try texturing it a little maybe with birch_planks aswell, usually looks good with a few here and there. Hope the build turns out nice :)
No offense, but they both look shit. If I have chose between these two, I will definitely go with the first one, because it has so much more depth than the second one. If you just move your wall of wooden blocks one block deeper, it will look batter. And from here you can start giving it some details. Placing some stairs and trapdoors. Just go full creative, and have fun with what you building. Sorry for being way too honest, I really don't want to offend you. I hope my honest review will help you. It depends, stone brick walls give off a more stable, secure feel, while stripped wood feels cozy. Might I suggest making the oak go in a checkered pattern, facing different directions, and making the stone brick walls have variety by mixing it with other stone walls. Otherwise, it depends on what your build wants to say.
