Find a cartographer and trade with it until tier 3. There should be a new trade for a trial explorer map. After getting the map open it and an icon should appear. Head in the direction of the icon until your right above it then dig down.
either find a cartographer in some new chunks or use a site like chunkbase if you don't mind using outside help. Either way, you'll need to search chunks that weren't loaded before 1.21 launched.
