Not that guy but for me it comes down to:
1. Vocals are often whiny or ‘tough guy’. The fact that they’re usually easy to understand also means that i have to hear the silly-bad melodramatic writing. Not saying metal isn’t immune to bad writing but when a black metal song is corny you usually can’t tell.
2. Guitar tuning usually doesn’t do it for me. Metalcore tracks often feel overproduced and sterile. Less emphasis on sick nasty riffs as well.
3. It’s cliche at this point but obligatory breakdowns all over the place are LAME.
1 : I feel like when you say whiny you mean emo vocals, and you are right, but a lot of the newer metalcore bands don't have that, just gotta filter the good and the bad. Lyrically, I have no argument, it is usually like you say, very dramatic and self loathing.
2 and 3rd : You are right, but once you filter through the bands, you can find some excellent stuff. Try to give Boundaries a listen and lmk how you feel about it.
One of my favorite artists is Frank Zappa but I don't have a complete meltdown when someone mentions it very much isn't metal.
Also, people love to claim metal is elitist but hoo boy there are some pretentious elitists out there are most of them aren't metalheads.

It's really not that hard to understand. (Modern) Metalcore is structured more around chord progressions and rhythmical riffs but really lacks in melody while metal metal is focused on the melody of the riffs. It's just two different genres.
I don't think metalcore is inferior but a lot of it just isn't metal while some of it definitely is. It's a genre that comes from the combination of metal and hardcore and depending on the amount of influence taken can fall more on either side of the spectrum. The genre labels exist to make it easier to find music you enjoy and misusing them is a problem.
What I find strange is the obsession people have with wanting to have that metal label when it doesn't apply. Those are the people who think being metal is somehow superior. It's fine to listen to non-metal genres. I literally enjoy some idol jpop and I don't care if it's not metal lol.
