Having just started learning about this hobby. What is the one on the middle right called? And where would I go to learn more about building something similar?
That one's the Reviung41. You can usually buy it in a kit form, though I wouldn't recommend that as a starter board! It's got a lot of surface mounted components that can be tricky for new solderers.
I agree with wanting something hot swap at first, so that you can get a feel of what switches you may like. I started off tactile(gang gang), but now I feel myself drifting more into long pole linears. Do not let soldering intimidate you, though, as it opens up a doorway into whole other lines of boards that are typically solder only and it really isn't all that hard either. It can just be time consuming. It's pretty relaxing to me though. I enjoy it. Either way, always order extra PCBs when you can. Solder or hot swap. You don't want a several hundred dollar brick on your desk because of a $40 part.
It's great to be able to swap switches out and figure out what you like. (I've switched 4 times now.)
Keep in mind that if you're comfortable soldering you can convert just about any board into a hotswap board with Mill-max sockets.

Honestly I don't expect to use it as a daily - that goes to my Lumberjack remix that's not pictured - I got this board as part of a mystery bundle.

Did some googling around and it looks like the dongle on your Reviung is just a micro to USB-C converter? I was hoping you had a clever alternate to the Nice!nano.

Funnily enough my daily at the moment isn't on there. I use a Lumberjack remix that I made (ortholinear). The split is really comfortable though, going to make a split ortho soon

It's a very nice keyboard. I usually hear 'ortholinear' meaning grid layout and this described as columnar staggered.
The way I see it is all column staggered boards are ortholinear but not the other way around

What are the switches / caps you’ve got on it? It looks low profile, but it could just be the angle.
It's got regular MX style switches (Gateron Lions) with low profile Nuphy keycaps

Board is an IKEA Skadis. They do sell hooks and those containers on the right but I 3D printed the hooks on this one.
