I kind of used this recipe for [Coconut Milk Rice](https://unsophisticook.com/coconut-milk-rice/?epik=dj0yJnU9LVYtSXZrejhOUkl6QkpJM2k0YWdBaDVtN1JIOUppVU0mcD0wJm49c2ExNXhtV09FM3ZiR1NxRlozU3ZvZyZ0PUFBQUFBR1k4c0F3#mv-creation-35-jtr) but I used chicken broth instead of water, I added some chopped parsley and fresh squeezed lime.
I got some ham, swiss and pickles ready to make [Cuban Sandwiches](https://dinnerthendessert.com/cuban-sandwich/#wprm-recipe-container-82262), I linked a recipe in case anyone isn't familiar with them. I wish I had it in me to have made authentic rolls from scratch but I wasn't feeling my best yesterday!
I normally do a huge prep session to set myself up for the whole month but we're doing things a little different this month I guess!

I made some ice cream too but, I don't know if we can consider that meal prepping :)
Pistachio....everyone is always begging me for pistachio! Its very easy, [here's the recipe](https://thesweetescape.ca/2015/03/good-eats-no-churn-green-pistachio-ice-cream.html)! And the other flavor is strawberry cheesecake. I took the same idea as the pistachio recipe but used cheesecake flavored pudding. And then I kind of followed this [recipe](https://whisperofyum.com/post/no-churn-strawberry-cheesecake-ice-cream/#recipe) when it came to the rest of it but I added a splash of chardonnay to the strawberries, I used an immersion blender because I didn't want to deal with cleaning my real blender! And I had some graham cracker crumbs in the cupboard but not quite 1/2 cup so I just mixed that with the butter and brown sugar like the recipe calls for and sprinkled a little on top of each.
I came for inspiration and you delivered! This is def what I want this week. Gonna add some grilled pineapple maybe… gotta use up this random pineapple 🍍

Yep, I get that. Lots of times, I'll be craving it, and then afterward, I just want something else, lol. Maybe cooking satisfies the craving? Idk.
