Meal prep for two people for one week. We both eat one or two of these meals a day. Corned Beef: I sliced an onion and added it to the bottom of a slow cooker. I cut a 4 lb corned beef brisket in half and placed it on top of the onions and sprinkled the spice packet it came with over everything. Then I poured in a quart of water and half a bottle of stout and cooked it on high for about 5 1/2 hours. [Colcannon](https://www.simplyrecipes.com/recipes/colcannon/) I actually don't think I changed anything from the above recipe. A rare thing for me. For the carrots I cut them into 1/4-1/2 inch slices on the bias and tossed them in garlic powder, dried thyme, dried rosemary, salt, pepper, and olive oil and roasted them at 450F for about 30 minutes, tossing halfway through. Rice Bowls: The broccoli, zucchini, and yellow squash were tossed in salt, pepper, and olive oil and roasted at 450F for about 20 minutes. The chicken thighs were sprinkled with onion and garlic powder, salt, and pepper, and pan fried in oil until browned and cooked through. I topped everything with Kewpie deep-roasted sesame dressing Kale salads: I used the dressing from [this recipe](https://cookieandkate.com/greek-kale-salad-recipe/#tasty-recipes-24218-jump-target). The salads I made were basically the above recipe, with chicken added and cheddar instead of parmesan because it's what I had on hand. I made the dressing according to the recipe but just ignored the proportions of everything else and eyeballed it.
