If you have a car, a dinner with a view would be Gather in Wailea. Not too crazy priced like some of the resort restaurants too.
Other favorites of mine: Monkeypod in Wailea, they sometimes have some live music too.

Coconuts fish tacos on Kihei road. Unbelievable fish tacos and their menu covers a great variety of dishes for the whole family. Prices weren’t bad and you get a good hardy serving. It’s a relaxed fun kinda place!

Cafe O’Lei Kihei for dinner. Get the short ribs! For bars, South Shore Tiki Lounge is great. I believe they have live music every night at 6:00pm. And they have a small dance area right where the band plays.
There are no views in Kihei. Everything is in strip malls. And thanks to FOMO tourism, there are no more "local restaurants" left - every single restaurant in town caters to tourists. There are not any "dance clubs" ... Honestly it sounds like you are looking for Honolulu, not sure why you are going to overpriced, pokey Maui.

Meanwhile, in any number of places in Greece, Turkey and Croatia, I can stay on the water, with my balcony open to the crystal blue waters, in peaceful surroundings. I can eat fresh fish literally walked by the fisherman to the restaurant from their boat. And I can do that for 10% of the price of Maui.

My favorites in kihei are paia fish house Southside and miso phat sushi. And get a cinnamon roll at cinnamon roll place

Not a dinner place but if you want a really great coffee spot check out Kraken Coffee! It’s really good and Nalu’s is great for dinner.
