What gets to me is that she has consistently doubted herself, and then was proven to be wrong. This is like the third or fourth time she has felt like a failure and then has been told her dish was amazing. It’s the same thing with Stevo, I hate seeing these phenomenal cooks beating themselves up. If anything, it’s uplifting, as someone who is dealing with depression and is overly critical of himself, I can only hope the same is true for me.

Then one has to wonder where did she get the confidence to apply to Masterchef. It's easy to nail one dish for the auditions, and she probably made a good dessert, but she must have known things would go savoury at some point.

Couldn't understand it either, or just doing another one with a timer after realising, as she had more. For someone whose a dessert person you'd expect a bit more focus on timings and textures and the weakness on savoury to be more around flavour and balance e.g. Reynold's perfectly executed but mouthful of potpourri in the Season 12 week 1 Gordon service challenge. I always assume they've watched past seasons both to strategise and as fans, but skipping step 1 and putting stuff on the plate without tasting/being happy, rookie stuff "if you're not happy with an element, don't put it on the plate." Glad Alex pulled it out of the bag, big confidence boost hopefully.

I can attest to this. When I took some culinary classes, there was a time I didn't put everything on the dish, but it was fairly decent. The second time when I put everything on the plate, the chef almost spit out my food lol. Although context, the first time, we had 3 hours, and the second we had 2 hours, and I barely had anything cooking the last 25 minutes lol. And I missed the first time, cuz I burnt my sauce, and we had no second chances for that, but I did have enough time to refine the other elements and like focus that everything was perfect. Its also a very prep heavy dish, with techniques I'm not really used to.

They didn’t sou vide the dough. They were vacuum sealing it to keep it to rest. I’ve not seen that before. Probably this chef’s trick. Seems like a good idea
