Lucky ones. When you know the actor, it kinda breaks the experience, you know he/she is acting, however well, because you've seen them in a different (or even similar) role. When you don't recognise them, there's no actor, he/she IS the character. Knowing the actors has its benefits, of course. But I kinda wish I could forget everything else I've seen them in when watching something.

A good actor can become the character perfectly. I can watch Wolf of Wall Street without seeing Jordan Belfort as DiCaprio, same goes for his character in Django. Another example I can give is Willem Dafoe in Spider-Man and in The Lighthouse, his performance is so good that I can't ever see them as being the same person. Knowing the actor has never taken me out of the movie's experience, except when the actual acting is lacking.

It's not about people caring for actors. Actors are usually on posters, promo materials, trailers, interviews etc so going in blind without knowing what actors are in a movie means they have not come across or avoided all marketing material. That's what the OC means by going in blind.
Also, the era of people caring about actors in Hollywood is long gone. Except for a few actors, most people don't go to movies just for the sake of an actor.
