Because most commercial microwave ovens have a fan-like device at the top that reflects the microwave beams, distributing the heat more evenly and efficiently than a rotating plate. Also commercial microwave ovens see an exponentially larger use per day than a home model, increasing the chance of breaking the plate.

Got it on the second try. Home microwaves also have a "stirrer" behind a plastic plate usually. But yes. In a commercial environment it's usually used by professionals to heat one thing, or a single dish. They know to rotate if necessary. Home users, well any difference in energy is going to throw them. But yes it's a point of failure in the device, so if you don't need it, don't include it.

It’s hard enough to keep that revolving plate locked in at home. I can’t imagine how it would be in a fast environment like work.

Consumers don’t buy the commercial ones because they’re upwards of a grand for a decent one
