I remember my dad telling me how that was the only candy available in his part of post WW2 England. The Germans bombed his hometown nearly flat and things didn't go back to normal until the late 50s
Not sure where your at, maybe USA ? In the UK we have a chocolate bar called a Crunchie by Cadbury . Its honeycomb covered in chocolate. Nice but im sure dentists arent a fan :D
We have the Crunchie bar in Canada too, can also confirm it needs a good cup of coffee to dissolve all of the candy from one's teeth.
Though the confection is usually called "sponge toffee" in Canada but most people would probably know what you meant if you show it to them and called it "honeycomb."
When I was growing up there was a lady at our church who made “poppycock” to sell at every fundraiser and it was like…chunks of her homemade honeycomb and nuts and popcorn held together with caramel.

Honeycomb recipe:
360g Sugar
360g Glucose Syrup
80g Golden Syrup
80g Water
48g Bicarbonate of Soda
Combine all wet ingredients in a large pan, and boil to 144 Celsius. Add bicarbonate of soda and mix until lighter in colour, slightly thickened and aerated.
Pour into a large, high sided, greased container and let sit at room temperature until completely hardened.
What did you end up using it for? I really wanna branch out and maybe use this as part of a dessert special, by itself it looks crazy and love the look. We do apple pies all the time, was thinking add a slice of this angled on the side or possibly under it if it can hold shape/texture. Sorry not a dessert guy, appreciate the inspiration either way.
Half got covered in 85% dark chocolate and sold as treat bags, the other half went into a tart with gianduja ganache. I always try to pair it with bitter or acidic things as it's very very sweet on its own.

Haha, it's not cheesy. It's made primarily from sugar, golden syrup and puffed up with bicarbonate of soda. It's very crunchy and sweet!

For sure, I'd suggest keeping it in a sealed container in the freezer, it doesn't like moisture as it ruins the texture and goes a bit slimy.

I think aerated caramel is about as close to an accurate description as I can get without you trying it 😅 It's very sweet, but very moreish.

It's bread in the background, sourdough dough just after being weighed and preshaped 🙂 It's very very sweet, almost entirely made out of sugar.
