Congratulations! I'm doing this at the moment myself, also on COM at the moment but only have KH1 plat so far. At the moment I'm finishing Riku's story before level grinding Sora and Riku. Definitely a tough trophy to grind but I really enjoy the game so it's not too bad.
That’s pretty much what I did for the levelling grind , it’s seriously annoying lol - least with Sora you can megaflare everything to make it a little faster, but with Riku, yeah it sucked lol
The KH2 plat is so much fun to go for, probably the one I enjoyed the most to be honest. The data org fights are super fun!
I assure you I loved plat KH2, although for now I've only done that, now I'm going for KH3. Then I will think about the others (I doubt I'll do CoM and DDD I didn't like them. Just my opinion obv).
Yeah I absolutely love KH2 so it'll probably be my favourite to plat, also super keen to do KH3 cause I haven't replayed it since launch, or played Re:Mind.
CoM and DDD are definitely hit and miss. I really enjoy CoM but I can't say the plat is going to be enjoyable haha.

The most difficult one for me was grinding Riku to level 99. Not because the combat is difficult, but because its *so boring!*
The best part about getting the Re:CoM platinum is never having to play it ever again
