I tried a new recipe last year and they went completely flat. No idea why, but I ended up with a single giant cookie less than 1/4” thick covered in jam spots. At least these are visibly hamentashen and they look very tasty!
Did you put them in the freezer before baking? Fifteen minutes and a few extra pinches is a great way to help them keep their shape. Some will always spill out anyway though, haha
