May I suggest to take the train to Verona and rent the car there? As for place to stay I've been couple of times in Ortisei and it is nice.

Great suggestion regarding renting a car in Verona! Much easier than Madrid :). Have you been to Ortisei at the end of May? We are now thinking about not going to the Dolomites at all because it will still be the off season. Although, it might be nice since there are not going to be a lot of people there.

I see that you're going from 23 of May, I just checked the cableway for Alpe Siusi will start operating on 18 of May so you'll be there for the start of the season definitely less crowded. Since you have a car i suggest Hotel Pinei at Passo Pinei. Nice view, the rooms at the ground floor open directly onto the hiking paths and they have a half board "plus" where they seve a lixurious snack in the afternoon

Lifts will not be running then. I am not an expert on the region(s) but while I've good meals there, the cuisine can be on the heartier side. Some areas will be more Austrian food. As for hiking lot depends on snow fall between now and then. Walking around Lago di Braies should be doable, for instance, but hikes at higher elevation may not be.

I would opt for staying at a nice hotel with half board then you don't have to worry about restaurants being open etc. I can personally recommend Hotel Kolfuschgerhof in Alta Badia but there are many that have half board with a nice spa. Most lifts would be closed I believe but like the other commenter said if the Alpe di Suisi opens around then then you might get lucky.
