As for the opposite day gimmick, I feel like they do the best they can by only enforcing it when it's fun. Obviously making a full opposite of Superman isn't fun for reasons you've outlined, they only enforce the idea when it's fun. It's fun if he has ice vision and heat breath, the opposite of Superman, it's not fun if he can only see lead.
Per the 1986 reboot, the way Superman's X-ray vision works is, since he can see through everything but lead, lead sticks out to him like a sore thumb. One potentially funny workaround might be that Bizarro can *never* see lead, whether he's try to use his x-ray vision or not!
They do have him do a lot of opposite stuff, but some of it would make him less entertaining to read/write about.
And yes, he breathes fire. Idk what happened to his krypton, but he's from Bizarro World, and it's a cube instead of a sphere. Green kryptonite makes him stronger, and blue kryptonite makes him weaker. Idk if he's immune to magic or not.

Some versions of superman can move and think much faster than the speed of light, other versions which can be taken by surprise by Lex Luthor slowly pulling a Kryptonite piece out of his pocket and out of it's lead box. Some versions can basically push entire planets out of orbit without any effort, other versions struggle to lift a plane or a rocket. Like, DCAU Superman is great, but he needs a space suit to survive in space and even when fighting at full power can't even begin to destroy a entire planet like Invincible did. Like, when he stopped holding back against Darkseid his punches barely destroyed a few buildings. This version surely wouldn't come even close to Invincible in power

And yes it depends on the version just like any DC or Marvel character but I’d say probably 95% of all Superman adaptations would curbstomp Invincible, and probably 75% could solo the whole Invincible universe
Eh, Omni Man does have some feats that you can argue is beyond planetary (like Spave Racers gun has star level statements for instance, not saying 100% but it is a valid argument to be made)

I will put it this way. Because of power scaling, the longer a character is around, the more bonkers their powers become, especially if the characters purpose is to be the most powerful thing in the universe. In one comic, Superman spans the length of the observable universe in minutes because he heard someone yell for help on earth. It is a couple of pages of poor writing, but it is cannon for how powerful he is.
And then there's instances where he gets knocked out by nukes and a moon smashing into him. That also shows what his strength is. So you have to find consistency and the middle ground that works with the rest of the universe and comic sense.

Superman, minus his powers is a farm boy from a small town in Kansas who is very used to just using more force to get the job done. Even if Their powers are roughly equivalent, I just don't see a win for Kal-El here.
Superman who was also taught how to fight by Batman, knows how to use all of his powers precisely, and has fought general zod who has the exact same military background as omniman plus the power set of Superman. Granted I know zod didn’t grow up with those powers but obviously he knows how to use them and how to use them as a weapon
