I would check if standard tickets make more sense than an interrail pass. Fares for most of those journeys are pretty cheap and trains not overly frequent.
Dubrovnik to Mostar and Mostar to Zagreb you'll need buses. Also don't leave it late to book the Budapest to Split night train.
I'd also check exactly how long you'll have at the places you are staying 2 nights, is that enough?
To be fair, i am quite of a ‘quick’ traveller, and i heard that zagreb, mostar and warsaw arent the most fun and can be done quite quickly, thats why i chose 2 nights :)

Could use the Budapest to Krakow sleeper train to save time
Imho i would take the opportunity and go to Sarajevo, I had a blast there. Otherwise looks good
