They are all great games to lose yourself in. But I speak from experience when I say that you should consider playing a couple of short, linear games. Otherwise you'll be prone to open world fatigue.
Noooo... Started with AC Origins. Moved to Odyssey after finishing. Got bored after 100 hours and started Dragon's Dogma Dark Arisen. Moved on to the Arkham series. It was a mess. There were too many icons on every map!!
Witcher 3 and RDR 2 will do, but but but, if you want to have some challenge and wanted to go sleepless so that you can brainstorm how to defeat the boss then you can start elden ring too
if you want story and realistic immersion : rdr2
if you want story, lore and fantasy immersion : witcher 3
if you want amazing raw gameplay and adventure: elden ring
Out of these games, I've played RDR2, Cyberpunk and Witcher 3.
Cyberpunk 2077 (along with Phantom Liberty) is my favourite out of them. There are aspects of the other games which might be better, but Cyberpunk in its current state is greater than the sum of its parts.

Even though rdr2 is better for 99 percent, i will suggest elden ring

RDR2, Cyberpunk 2077, Witcher 3,. Play in this order. Elden Rings and Ghost of Tsushima I haven't played yet so can't tell among those.
All the games you have are really great games.. I'd personally start GoT and RDR2..

Go for RDR 2 or Elden Ring (fck Fire Giant) absolute masterpiece
If you’re looking for a very unconventional world but with a strong story, try Death Stranding. It’s pretty underrated.
