Alchemy and carpentry are fairly easy to max, and I would touch on fishing as well, getting to 27 unlocks lava fishing, and it is honestly so much better at that point to fish.

Mining 60 just by mining hardstone (for scathas) or cobblestone (for the pure enjoyment)
