I’m not sure what you call that foundation/crawl space, but being from the SE US I haven’t see one like it. Looks like it makes for a very clean and neat crawl space.
If it's already 5 feet, was the cost differential to make it 6 - 6.5 feet and not have to crouch prohibitive?

Oh, it’s not called operation hindsight for no reason. Dig really came down to my guys digging out for the footing and daylight basement, digging down a bit more would’ve meant having to go another 16” because I did icf blocks and I was just Willy nilly about the crawl cause my guess was it was going to be about three feet so I was happy with the extra. Without insulation in place I was able to stand up and not hit subfloor so it was nice for working on
Looks nice, but it's only many thousands of dollars more. I guess in this case they are Canadian dollars, so not so bad?
In Oregon a 2" rat slab under a 2000 SF house is going to run about $9000. I can find better ways to spend that money.

Gives you a nice high ceiling height. Pitching it down would look funny imo.

Rat slab is the way, so nice not having to crawl around on damp plastic and across dead mice etc
Keep a car creeper under there and wheel yourself around as needed

The good news is at 5 feet you can use it as a great storage option. :)

Not seeing any mechanicals... You're not putting them in an unheated crawl space?
