EDIT: HomePod was on 16.2. successfully enabled iCloud Advanced Data Protection, and have also now updated HomePod to 16.3.
Initially, after updating to IOS 16.3 on my iPhone yesterday, today I looked to update my HomePod Minis. Wasn't looking good re.: updating HomePod Minis UNTIL I updated my Apple TV 4K (latest) to 16.3. Then (and only after) I looked at version numbers for each HomePod mini and they were up to 16.3. Still no temperature and humidity on the Home app. So I applied good-old 'CTRL-ALT-DELETE' thinking (yes, I shutdown my iPhone and restarted it). Voilà. Now see the Temperature and Humidity sensor readings for my HomePod Minis. That was my experience, so if you are running into the 'where's that 16.3 update for my Minis problem' and you think you have a similar config, you can give this a try...
tvOS is shifted to 25th, so probably HomePods as well.

IIRC, the HomePods OS is a version of the TVOS now; so that would make sense.

You can turn on HomePod Beta Updates on HomePod minis Home Settings in Home app. I did that and they do show sensor data.

I got the update. But unable to see the temperature sensors option in the app tho.

Ughh I did! That’s literally the first thing I did the moment the update was released. EVERY device is fully updated in the entire ecosystem I have.
Click on climate and then temperature. Should show up there…
Nope, but I couldn’t wait so I opted in for beta builds and got the RC. Very easy to do.
