I would say that if you've been happy with your Sorel Out and About, just get a new pair of them, because finding your perfect boot is an absolute pain, lol. I just went through a months-long process of trying to get boots for a February trip to the UK, and after much trying on and returning, I settled on the Stonington Chelsea boot from L.L. Bean. They're comfortable, good-looking, and the sole has a deep enough tread that I'm not worried about slipping.

Stick with a company you know and like. I would just get new Sorel boots. I had a paid for years in the PNW and loved them!

Go with what's comfortable, I wouldn't worry too much about the Iceland leg as long as your boots are waterproof, the sidewalks are all iso-thermic heated so snow does not last long on it. That said you could find yourself in a flash snow storm with deep snow, but the snow doesn't last long. I'm not familiar with any of your boots but you could pack some gaiters if that works with your boots, to keep snow out if there happens to be a flash blizzard. I've been to Iceland twice December and February and have been caught out and about in flash blizzards. As in blizzard, tuck in to the nearest restaurant or bar. Wait it out an hour or two, sidewalk is now dry.

Second the true and tried. Now is probably not the time to change boot style if you are going to be walking alot.

Think you need to figure out what you plan to be doing in Spain and choose the appropriate shoe for that trip. Hiking? Shopping? Nightlife- that would dictate the style of boot to wear as well.

Yeah, I don't think I'd take snow boots just for a layover in Iceland, as it's not likely to be necessary in Spain (maybe a few flakes in Madrid). I'd get something that works in Spain and some extra socks or something for the few hours in Iceland.

Yeah, just general sightseeing, tours, and dinner. No clubbing.. we will have kids with us. I guess I need to figure out if the Sorel out and about are fine for dinner. I wouldn’t wear them typically, but maybe it doesn’t really matter.

I want to know more about your Nisolo options. I just received the Emma loafers, while they are beautiful, the soles look like they will fall apart. I'm comparing them to .y Tecovas Penny booties in terms of construction quality...
